I know, I know... you've heard about what an amazing cook I am and you're just dying to know what I've made for dinner recently. :)
Actually... I'm not such a great cook. But this is a yummy dish even I can't mess up, and it's great to make on a hot summer day because it involves almost no cooking. Sometimes I get tired of eating just cold food in the summer and I want something hot, this involves almost no time in front of the stove.
This wrap was invented by the hubby, but modified from a wrap I looove at Pita Pita in Ypsilanti. If you haven't been there, please go. When I was in college my dear friend Lindsey and I were there pretty much on a weekly basis, the staff got to know us so well they'd give us free food :)
Anywho... at Pita Pita they have this yummy cauliflower and potato wrap. This is the only Middle Eastern restaurant I've been to that has this kind of wrap, so maybe the wrap is not authentic. I don't even care.
One day I was jonesing for this wrap, and Dave made this fantastic variation of it. Just sautee up some cauliflower, potatoes and garlic with spices of your choice (one time Dave added a splash of soy sauce to the veggies and it turned out so good, so we always do that even though it's so true to the real dish :), slather a pita with some hummus and put the veggie filling in. If we have green onion on hand we throw that in, too. Wrap it all up and give the whole wrap about a minute on each side in the hot pan to heat up the pita and help the wrap stay together.
I know it doesn't look like anything special, but don't judge a book by it's cover on this one!
